Morrowind - 100+ hours and a full map for one character, was a pain to make a second though.
FF 8 - 8 you say, don't laugh or ill sic Lunatic pandora onto you
and last but not least Mega man X for the nes, that game captured my time from the age of 5.

Call of Duty - with Heat of Battle multi mod
Morrowind - first played it on XBox and then PC w/expansions

Role-playing games:
Definitely FFVII. The only FF that captivate my fully....FFVI is close 2nd. I played FF4-10 BTW.
Real-Time Strategy:
Total Annihilation. New RTS games have all funky graphics...but none has the great management capability of TA. It's only weakness is lack of uniqueness between factions..
Strategy RPG...dunno what to call:
Final Fantasy Tactics. Great gameplay and story. and FFT Advance looks pale in comparison...
PC RPG:
Morrowind. One of the only great non-linear RPG I know..it's great to know that I can almost go straight to the final boss rightaway. Just like Fallout..which is 2nd best for me.

Panzer General
Tecmo Super Bowl
Mario Bros 3
X-Wing and sequels, I never beat the Death Star and my wife did so she wont let me live that one down.
Katamari Damacy however that one is spelled

I still play Tecmo Super Bowl on an emulator on my PC (in fact, I just started a new season with Green Bay two nights ago--sad but true), so I obviously count it as one of the best games ever. And I remember the revolution that Super Mario Brothers 3 brought to console gaming; it opened doors that took the side-scrolling genre to a new level.
